HANU, the contemporary Korean restaurant at St. Regis Gardens, Palm Jumeirah, is now Dubai's only official ambassador for Hoengseong Hanwoo,, Korea’s finest marbled beef.

Hoengseong Hanwoo is widely regarded as Korea’s number one premier beef. It is prized globally for its exceptional marbling, tender texture and rich umami. The cattle are raised in the pristine environment of Gangwon Province, where the cool climate, pure water, and crisp mountain air impart a uniquely refined flavor.

Strict quality control is maintained by the Hoengseong Livestock Cooperative Federation, ensuring impeccable quality and full traceability. Only the highest grades of this ultra-rare beef are selected for export. By securing this exclusive access, HANU introduces a genuine melt-in-the-mouth experience to Dubai, setting a new benchmark for Korean cuisine in the region.

The Art of the "Hanwookase" by Chef Moon

To commemorate this ambassadorial role, Chef Moon has curated an immersive tasting experience: the Hanwoo Beef Omakase, or "Hanwookase." This set menu, available starting October 8th, is a culinary narrative designed to honor the beef’s extraordinary qualities and Korea’s rich culinary heritage.

The experience begins with Juansang, an elegant selection of small bites:

  • Yuksu: A comforting, warm Hanwoo beef broth.

  • Yukhoe: Classic beef tartare, showcasing the purity of the Hanwoo.

  • Crispy Cow: A unique take on Hanwoo's versatility.

  • Mushroom Bugogi: Charcoal-grilled beef reimagined with earthy depth.

The centerpiece is Meat Me at the Grill, featuring the ultra-premium Hoengseong Hanwoo 1++ cuts, including striploin, tenderloin, and ribeye. For a savoury contrast, the menu includes Yangyeom Galbi, tender short ribs marinated in a rich, soy-based sauce.

The meal is rounded out with seasonal Ban Chan, a lively Scallion salad with gochujang vinaigrette, and a savoury egg soufflé. Diners can also choose from stews served with rice, such as a spicy kimchi stew or a Japanese A5 brisket soybean stew, completing the traditional Korean dining narrative.

The Hanwoo Beef Omakase is a set menu priced at AED 620 per person with a minimum order of two.
